Ingredients

For the pesto:

  • 45g fresh basil leaves (about 2 handfuls)
  • 2–3 garlic cloves
  • 20g cashews (or nuts of choice)
  • 35g parmesan (or cheddar, if preferred)
  • 2–3 tbsp extra virgin olive oil
  • Salt, to taste
  • 1 scoop Samāh Seed Cycling Blend

For the pasta:

  • 200g pasta (gluten-free or regular)
  • A handful of cherry tomatoes
  • Olive oil
  • Salt & herbs for sautéing

Instructions

  1. Make the pesto: In a blender, blitz the basil, garlic, cashews, and cheese until roughly combined. Add olive oil and Samāh Seed Cycling Blend last, blending until smooth and creamy. Adjust salt as needed.
  2. Sauté the tomatoes: In a small pan, heat olive oil and sauté cherry tomatoes with salt and herbs until they blister and soften.
  3. Cook the pasta: Boil your pasta in salted water until al dente. Reserve 1/4 cup of the starchy pasta water before draining.
  4. Bring it together: Toss the hot pasta with your fresh pesto, sautéed tomatoes, and a splash of pasta water to emulsify the sauce and coat everything beautifully.
  5. Serve warm: Garnish with extra cheese, herbs, or even chili flakes for a little kick.
