Ingredients

For the Green Sauce: 1/2 cup coriander, 1/4 cup mint, 1 green chili, 3 cloves garlic, salt to taste, 3 tbsp Greek yoghurt, mixed herbs to taste, 1 scoop Samāh Seed Cycling Mix, water as needed (to adjust consistency)

For the Tacos: 1 pack tofu shredded, 1/2 cup onion chopped, 1 tbsp ginger chopped, 1 tbsp garlic chopped, 2 tsp paprika or chili powder, 1 tsp black pepper powder, 2 tsp mixed herbs, garlic powder and onion powder (optional), salt to taste, olive oil for sautéing, gluten-free tortillas, fresh salsa to serve

Instructions

  1. To make the green sauce, blend coriander, mint, green chili, garlic, salt, Greek yoghurt, mixed herbs, and Samāh Seed Cycling Mix. Add water gradually until desired consistency is reached. Set aside.
  2. Shred the tofu and set aside.
  3. Heat olive oil in a pan and sauté the onion, ginger, and garlic until fragrant (about 2-3 minutes).
  4. Add paprika/chili powder, pepper powder, mixed herbs, optional garlic and onion powder, and salt. Stir well.
  5. Add shredded tofu to the pan and cook for 3-4 minutes, mixing well with the spices.
  6. Warm the gluten-free tortillas and fill each with the tofu mixture.
  7. Top with fresh salsa and a generous drizzle of the green sauce.
  8. Serve immediately and enjoy!
