Ingredients
For the Green Sauce: 1/2 cup coriander, 1/4 cup mint, 1 green chili, 3 cloves garlic, salt to taste, 3 tbsp Greek yoghurt, mixed herbs to taste, 1 scoop Samāh Seed Cycling Mix, water as needed (to adjust consistency)
For the Tacos: 1 pack tofu shredded, 1/2 cup onion chopped, 1 tbsp ginger chopped, 1 tbsp garlic chopped, 2 tsp paprika or chili powder, 1 tsp black pepper powder, 2 tsp mixed herbs, garlic powder and onion powder (optional), salt to taste, olive oil for sautéing, gluten-free tortillas, fresh salsa to serve
Instructions
- To make the green sauce, blend coriander, mint, green chili, garlic, salt, Greek yoghurt, mixed herbs, and Samāh Seed Cycling Mix. Add water gradually until desired consistency is reached. Set aside.
- Shred the tofu and set aside.
- Heat olive oil in a pan and sauté the onion, ginger, and garlic until fragrant (about 2-3 minutes).
- Add paprika/chili powder, pepper powder, mixed herbs, optional garlic and onion powder, and salt. Stir well.
- Add shredded tofu to the pan and cook for 3-4 minutes, mixing well with the spices.
- Warm the gluten-free tortillas and fill each with the tofu mixture.
- Top with fresh salsa and a generous drizzle of the green sauce.
- Serve immediately and enjoy!
